- 1 apple, diced
- 1 can white beans, drained and sautéed well in olive oil
- Pumpkin seeds, toasted on the stove
- Whatever assorted veggies you have on hand, such as cherry tomatoes, baby carrots, yellow peppers, etc.
- Your favorite salad dressing.
