Basic Lentil Soup (nightshade free)

This soup is soooo delicious!  My kids even like it which is saying a lot.  It’s also nice for those looking to avoid nightshades.


  • olive oil for sautéing
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp coriander
  • 1/2 tsp powdered ginger
  • 2 cups lentils
  • 8 cups vegetable stock
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1/2 bunch of Lacinato kale (or other greens), chopped into small pieces
  • 1 1/4 tsp sea salt


  1. Sauté the onions for about 5 minutes.
  2. Add the garlic and spices and sauté for about 2 more minutes.
  3. Add the lentils and vegetable stock and bring to a boil.  Reduce to a simmer.
  4. Chop your carrots and celery and add them to the soup.
  5. Simmer for an hour.  Five minutes before serving, add the kale to soften and salt.
  6. Serve and enjoy!
