Mom’s Chickpea Salad

This recipe is from my mom!  A great alternative to egg salad, it makes a great lunch option.  Try it on bread as a sandwich, or just on its own!

Ingredients:

  • 1 can of chickpeas, rinsed and drained
  • 1 celery sticked, diced
  • 1/4 cup pecans, chopped
  • 1/2 cup red grapes, chopped
  • 1 tsp. curry
  • 1/4 cup vegan mayo

Instructions:

  1. Mash half of the chickpeas.
  2. Combine all ingredients well.
