This recipe is from my mom! A great alternative to egg salad, it makes a great lunch option. Try it on bread as a sandwich, or just on its own!
- 1 can of chickpeas, rinsed and drained
- 1 celery sticked, diced
- 1/4 cup pecans, chopped
- 1/2 cup red grapes, chopped
- 1 tsp. curry
- 1/4 cup vegan mayo
- Mash half of the chickpeas.
- Combine all ingredients well.
